The food truck will also offer paninis which will have pesto, tomato confit, fresh mozzarella, arugula, balsamic glaze on ciabatta bread.

It will also offer new dishes like chicken Parma Rosa grilled cheese. Owner Holly Moss said it will have a fried chicken breast cutlet dipped in Parma Rosa sauce on grilled cheese. The Parma Rosa is described as a vodka sauce, but without the vodka.

Moss’s favorite item on the menu is cherry pepper bombs. The Italian sweet pepper will be filled with seasoned ricotta then it is breaded and deep fried.

She also enjoys making desserts and described herself as having a huge sweet tooth. Moss will be making tiramisu, cookie butter tiramisu and crema di caffe. The food truck will have seasonal desserts like ube tiramisu for Halloween. They will be at Macon’s Hispanic Heritage Month festival where they will have a Mexican-Italian fusion menu. On the menu there will be a pistachio tres leches which Moss believed was a great combination of the two cultures.

To wash it all down the food truck offers authentic Italian sodas like Fonti di Crodo Limonata and Aranciata.

Moss said she has been working on this concept for a couple of years. She believed there was a lack of Italian food in the area. While living in New York, she experienced a bit of the culture which made her want to bring it back home.

“The Italian food up there just really inspired me and I feel like we needed something more like it down here,” she said.

Moss was born and raised in middle Georgia and attended Perry High School. She said she has worked as a waitress but now she is in the kitchen. She hopes the food truck will be the start of eventually opening her own restaurant.

The food truck recently opened and is starting off with attending events on the weekends. They will be at the International Farmer’s Market and at the Macon-Bibb Hispanic Festival on Oct.24.

When they are not at events, they will be at the Beau Claire Plaza on 3421 US Hwy 41.
